A team from the Bourbon Brotherhood was dispatched to the Bulleit distillery in Shelbyville to select a barrel for our group. We tasted samples from 6 different barrels. Barrels 3 and 5 were both amazing. After a blind tasting of those two barrels, barrel #3 came out as the winner.
Bulleit produces their bourbons using 2 different mash bills and 5 different yeast strains. Our barrel is the one that has a higher rye content (60% corn, 36% rye, 4% malted barley) and was fermented using yeast strain #3. Despite being a high rye bourbon, the barrel we selected was not heavy with spicy pepper notes, but was more approachable, leading with vanilla and caramel flavors. We weren't provided with an exact age on this barrel, but were told it was between 8-12 years old. It will be bottled at 104 proof, non-chill filtered.
